How to Make Lemon Sugar Cookies

This is a brief overview of how to make these delicious, perfect cookies. For the full recipe with all of the ingredients, see the recipe card at the bottom of the post.

  1. Mix together the dry ingredients. In a medium bowl combine the flour, baking powder, and salt.
  2. Cream the sugar. In a large bowl with a hand mixer or in the bowl of a stand mixer, cream together the butter and sugar until it is light and fluffy.
  3. Add in the eggs and lemon extract. Add the eggs one at a time. Then add in the lemon extract. Blend until it is fully combined.
  4. Add the dry ingredients to the wet ingredients. Read more about this step below.
  5. Roll into dough balls. Roll the dough into one inch balls, approximately one and a half tablespoons. I love using this cookie scoop for this task. It keeps the cookies uniform in size. Gently press down the cookie and bake.
  6. Make the white chocolate glaze. Combine the white chocolate, milk, and lemon extract and microwave in 30 second intervals. Drizzle over the cooled cookies.

I love this 1 1/2 tablespoon cookie scoop. It is perfect to make uniform cookies that cook evenly.

Lemon Extract vs. Lemon Juice

The primary difference between lemon extract and lemon juice is the acidity that they bring to the recipe. Lemon extract brings the flavor without the acidity, and lemon juice brings both, but not as intense of a lemon flavor.

If you choose to use lemon juice instead of lemon extract, you run the risk of the cookies rising too fast and then not having the structural support they need to hold that rise, so they can then collapse. It won’t ruin the cookies or the taste, it will just make for a different texture and a less intense lemon flavor.

If you want to skip the lemon extract, consider using two teaspoons of lemon zest instead of lemon juice.

Tips and Tricks

These are a few simple things that will ensure that your sugar cookies turn out perfect. Keep these tips in your brain, because they are helpful for all cookie recipes.

  • Measure your flour properly. This is such an important step, it gets its own section below.
  • Ensure your butter is room temperature. You should be able to push your finger into it and make a small dent but not go all the way through. The butter will actually feel cold to the touch.
  • The eggs should also be room temperature. Eggs that are fresh from the refrigerator can lower the temperature of everything else. A quick way to bring them to room temperature is to put them in a bowl of lukewarm water for five minutes.
  • Cream the butter for at least three minutes. The purpose of this step is to beat air into the sugar, which makes for light and fluffy cookies. We aren’t just mixing the two ingredients in this step, we are creaming them together, so make sure it gets its time.
  • Keep your pans cool. If you are baking in batches and need to use your baking pans more than once, you need to make sure that they have cooled before you put more dough on them. You don’t want the cookies to start cooking before you pop them in the oven.
  • Keep the cookies uniform in size. This way they will cook evenly. A great way to do this is by using a cookie scoop. My favorite scoop is linked above.

Measuring Flour for Cookies

Measuring flour correctly is the best way to ensure that your baked recipes turn out the way you want them to. When you don’t follow these steps your flour can pack and you can end up with up to 25% more flour than you want. This will result in dry cookies.

While your best bet is to measure the flour with a kitchen scale, I know not everyone has one. Follow these steps and these cookies will be perfect.

  1. Whisk the flour. In whatever container your store the flour in, give it a whisk before you measure it.
  2. Use a spoon to scoop your flour. If you scoop the flour with the measuring cup, it can pack. Use a kitchen spoon to scoop the flour into the measuring cup.
  3. Level it off. Using the flat edge of a spatula, level off the flour.

Storing and Freezing

Leftover cookies can be stored in an airtight container at room temperature for one to two weeks. As with all recipes, use your best discretion when it comes to leftovers.

These cookies freeze great! Freeze them in a single layer for four hours before transferring them to an airtight container. Store them in the freezer for up to three months.

These can also be frozen as dough balls. Freeze the dough balls in a single layer. Once completely frozen (about four hours), transfer them to an airtight container. The dough balls can be baked right from frozen. Bake them in a 350 degrees Fahrenheit oven for 10 to 12 minutes.

Instructions

Lemon Sugar Cookies

  • Preheat your oven to 350 degrees Fahrenheit. Line rimmed baking sheets with parchment paper.

2 1/2 cups all purpose flour, 1/2 teaspoon baking powder, 1/2 teaspoon table salt

  • Let cool on the pan for about two minutes before moving to a cooling rack to cool completely.

Icing (optional)

  • After cookies have cooled, melt the icing ingredients together in the microwave in 30 second intervals, stirring in between. Melt until smooth. Drizzle over cookies and allow to cool.

I follow the recipe exactly but found that I had to bake them a little bit longer. 13 minutes. The recipe said to roll out the dough in 1-in balls. My dough came out very sticky. I could not roll them by hand and had to scoop them like normal cookies. Other than that they came insanely delicious. I’m going to have to stop myself from eating them all.

Hi Robert! We’ve had a glitch over the last week that makes everything look super wonky! It’s frustrating for me too! If you refresh the page it should all flip back to normal. I’m so sorry about that, we are trying to get to the bottom of it.

FAQs

Do you put icing on sugar cookies before or after baking? ›

Many bakers like to let bake their cookies at least a day before decorating to prevent oil spots. Sometimes when using two different icing colors the colors will bleed, especially with black. When your using really dark colors to help prevent this make sure to give plenty of drying time before applying the next color.

What happens if you add too much sugar to sugar cookies? ›

Sugar sweetens the cookies and makes them an enticing golden brown. Adding too little sugar can affect the taste and texture of cookies. Adding too much can cause them to be brittle. Take your time creaming the sugar and butter together at the beginning.

How to ice sugar cookies for beginners? ›

Place the powdered sugar, vanilla and 2 1/2 tablespoons of milk or water for the flood icing in a bowl and stir together with a spoon or a fork until smooth. This icing should still be fairly thick, but it should drizzle easily and a bit of drizzled icing should sink immediately back into the icing.

How to jazz up sugar cookies? ›

Get a recipe, buy the ingredients (butter, sugar, eggs, flour and vanilla). Why buy ready-to-bake when it is really easy to make sugar cookies? You can add citrus zest, cinnamon, or almond extract to the dough. You could also ice them with a tasty frosting and add some nuts or toasted coconut.

What's the difference between frosting and icing on cookies? ›

Frosting is the thickest of these confections and is ideal for spreading or piping on cakes, cupcakes and cookies. Icing is a little thinner than frosting and is often poured or piped over coffee cakes, pound cakes, doughnuts and cookies—and it usually hardens when it dries.

What makes cookies fluffy and not flat? ›

Room temperature butter is just the right consistency to incorporate air when it's creamed with sugar. These trapped air pockets result in risen, fluffy cookies. If the butter is any warmer, it won't incorporate enough air and your cookies will have less rise.

What happens when you add too much butter to sugar cookies? ›

Classic signs of a cookie with too much butter include crispy-bordering-on-burnt edges, a greasy surface, an excessively brittle texture, and a predominantly buttery flavor that overpowers the other caramel and chocolate notes.

What does brown sugar do in cookies? ›

Brown sugar

Brown sugar is also hygroscopic (more so than granulated sugar) and will therefore also attract and absorb the liquid in the dough. The difference is in the molasses that makes brown sugar brown: It adds moisture and slight acidity, resulting in a moist and chewy texture.

How do I get better at decorating sugar cookies? ›

Start by outlining the cookie with piping-consistency icing in any color you choose. Then, use flooding-consistency icing to fill the outlined area, starting by flooding around the edges and working your way towards the center. If the flooding is inconsistent in thickness, redistribute the wet icing with a toothpick.

Why is my sugar cookie icing not hardening? ›

Undermix, and your royal icing looks translucent and is structurally weak. Overwhip, and you're giving too much volume to the egg proteins via air, causing the structure to weaken in a different way. Overmixed icing usually looks porous when dry, and sometimes will not even fully dry and be soft/brittle.

Do you decorate sugar cookies hot or cold? ›

Why do my sugar cookies taste so bland? ›

If the baked cookies taste a bit bland (and if the dough is fairly soft and receptive to additions), add salt and/or spices to the remaining dough before baking. If, on the other hand, they're a bit salty for your taste, try rolling the dough balls in sugar before baking.
